Catalase is used in the food industry to remove hydrogen peroxide from milk used to make cheese. Catalase is also used in food packaging to prevent oxidation of food. In the textile industry, catalase is used to remove hydrogen peroxide from textiles to ensure that the finished product is free of peroxide.
It is also used in the cleaning of contact lenses: the lenses are soaked in a detergent containing hydrogen peroxide, and then hydrogen peroxidase is used to remove any residual hydrogen peroxide before use.
Hydrogen peroxidase is used in cosmetology: some facial treatments incorporate the enzyme and hydrogen peroxide with the aim of increasing the amount of cellular oxygen in the upper layers of the epidermis. Catalase is also often used in the laboratory as a tool to understand the effect of enzymes on reaction rates.
Uses and functions of Catalase powder.
An oxidoreductase that oxidizes hydrogen peroxide to oxygen while simultaneously reducing another molecule of hydrogen peroxide to water. As a natural antioxidant, it can be used to study the role of reactive oxygen species on gene expression and apoptosis. It has also been used to protect proteins, lipids and nucleic acids from oxidative damage.
Enzymes. Used mainly in the production of cheese, milk and egg products to eliminate the peculiar odor caused by the production of hydrogen peroxide during ultraviolet irradiation; also used as a loosening agent in the manufacture of bread. Maximum dosage in milk is 20mg/kg.
Characteristic of Catalase powder.
Nearly white to light brownish yellow amorphous powder or liquid. Molecular weight is about 240,000 tons. Soluble in water, aqueous solutions are generally light tan to brown, almost insoluble in ethanol, chloroform and ether. Optimum pH 7.0, in the dilute acid role is blocked. The optimum temperature is 0~10℃, too high temperature or too large concentration of hydrogen peroxide can destroy its activity.
One molecule of catalase can destroy 5 million hydrogen peroxide molecules in 1min. The main principle of action is: the optimal pH value obtained from the liver is about 7.0, the activity is high between 5.3 and 8.0, and decreases quickly below 5.0. Those obtained from Aspergillus niger are active between 2 and 7 pH, while those obtained from Chlorella vulgaris have an optimal pH of 7 to 9.
It is found naturally in aerobic microorganisms, mammalian red blood cells, liver (very abundant), etc.
