Glyceryl monostearate is a common emulsifier widely used in the food, pharmaceutical, cosmetic and detergent industries. Due to the interaction of monoglyceride with fats and oils, it can promote the generation of its crystal form, with the effect of improving the ductility, esterification and water absorption of plastic fats and oils, as well as preventing spattering during heating, etc., and has been used in the production of margarine, shortening, mayonnaise, seasonings and other special fats and oils.
Glycerol monostearate interacts with gluten proteins to form a symmetrical type of complex of a protein-like lipid-protein and a starch-like lipid-protein, thus enhancing gluten quality. At the same time, or lactic acid monoglyceride, citric acid monoglyceride, luciferic acid monoglyceride, diethyl phthalate tartaric acid monoglyceride and other series of emulsifiers of the mother; monoglyceride can be added to improve the flavour of food and its functionality.
Uses of Monostearin.
Biochemical research, thickening of margarine, solvent for oils and waxes etc., emulsifier, protective agent for hygroscopic powders, opaque opacifier. Gas chromatography stationary solution (maximum use temperature 125°C, solvent hot ethanol), separation and analysis of oxygenated compounds and volatile oils.
Used as emulsifier and surfactant in food or cosmetics, also internal and external lubricant for plastic products.
