Uses of Bromelain.
As a medicine, it is suitable for various acute and chronic inflammations and edema; surgical trauma or postoperative wound healing, inflammation caused by fractures or dislocations, edema, hematoma, asthmatic bronchitis, pneumonia, lung abscess, osteomyelitis, arthritis, cellulitis, pyelonephritis, thrombophlebitis and other inflammatory and swelling diseases. As a food processing aid, it is mainly used for beer cold resistance, meat softening, various pre-cooking preparations, and the production of hydrolyzed proteins.
Enzyme preparations. Mainly used for beer cold resistance (hydrolyzing protein in beer to avoid turbidity caused by refrigeration); meat softening (hydrolyzing muscle protein and collagen to tenderize meat); pre-cooking preparations for cereals; in the production of hydrolyzed proteins, as well as in bread, poultry, wine, etc.
Bromelain is also known as pineapple enzyme. It is a thiol protease extracted from pineapple juice, peel, etc. It is a light yellow amorphous powder with a slight specific odor. Molecular weight 33,000. The optimal pH value for casein, hemoglobin, and BAEE is 6-8, and the pH value for gelatin is 5.0. Enzyme activity is inhibited by heavy metals.
Slightly soluble in water, insoluble in ethanol, acetone, chloroform and ether. It preferentially hydrolyzes the peptide chains on the carboxyl side of basic amino acids (such as arginine) or aromatic amino acids (such as phenylalanine, tyrosine), selectively hydrolyzes fibrin, can decompose muscle fibers, and has a weak effect on fibrinogen. It can be used for beer clarification, medicinal digestion, and anti-inflammatory and detumescence.

Take fresh and clean pineapple peel, thorns, core and other waste materials with a juice yield of more than 45%, squeeze, take the juice and filter out the fruit debris. Add 0.025-0.05% benzoic acid to the filtrate and add 5% kaolin for adsorption.
Adjust the pH of the kaolin adsorbent to 6.7-7.0 with saturated sodium carbonate solution, add 5% sodium chloride, stir and filter. Take the filtrate and adjust the pH to 4.8-5.1 with hydrochloric acid, add ammonium sulfate, let it stand and precipitate, take the precipitate and dry it under reduced pressure, which is bromelain. The yield is 0.054-0.103% for pineapple waste.
