Product method of Bulk Cochineal Extract Powder.
Female cochineal (Dactylopius coccus) is extracted with water, dilute alcohol solution or alcohol, aluminium hydroxide is added to the extract and it is precipitated. The molecular ratio of aluminium and carminic acid is l:2. It needs to be pasteurised or otherwise treated to destroy all salmonella bacteria before use in food.
