Vanillin has a strong and unique vanilla bean aroma, which is stable and not easy to volatilize at high temperatures. It is obtained by hydrolyzing o-aminoanisole to guaiacol through diazo, condensing it with formaldehyde in the presence of nitrosodimethylaniline and a catalyst, or reacting it with chloroform under the catalysis of potassium hydroxide, and then purifying it through extraction separation, vacuum distillation and crystallization. It can also be made from wood pulp waste liquid, eugenol, guaiacol, safrole, etc.
